Broccoli

Serves 6

  • 1-1/2 pounds broccoli, cut up (6 cups) OR one 16-ounce package frozen cut broccoli

Cook fresh broccoli, covered, in a small amount of boiling water for 9 to 11 minutes or till crisp-tender. (Or, cook frozen broccoli according to package directions). Drain.

NOTE: May also be steamed in a steamer for 5 to 8 minutes. This retains better flavor and more of the vitamins. Commonly served with mayonnaise or a cheese sauce (see Cauliflower in Cheese Sauce for sauce recipe).
