Cucumber Tomato Salad
Serves 8
- 2 large cucumbers, peeled and diced
- 2 large tomatoes, seeded and diced
- 1 medium green pepper, diced
- 1 medium red onion, diced
- 1 8-ounce fat-free Italian dressing
- 2 tsp sugar
In a bowl, combine the cucumbers, tomatoes, green pepper and onion.
Combine salad dressing and sugar. Pour over vegetables.
Refrigerate one hour. Server with a slotted spoon.
NOTE: Instead of dicing the cucumbers, I slice them lengthwise, then slice into 1/2-inch slices end-to-end.
