Green Beans with Bacon
Serves 3
- 4 slices cooked bacon (reserve 2 tbsp drippings)
- 1/2 pound green beans OR one 9-ounce package frozen cut OR French-style green beans
- pepper
- salt
In a large skillet cook bacon till crisp. Drain bacon on paper towels, reserving 2 tablespoons drippings. Crumble bacon and set aside.
Cut fresh beans into 1-inch pieces or, for French-style, into lengthwise slices. Cook, covered, in a small amount of boiling water 20 t0 25 minutes for cut beans (10 to 12 minutes from French-style beans) or till crisp-tender. (Or, cook frozen beans according to package directions.) Drain, leaving a small amount of water.
Add bacon and drippings to beans and season with salt and pepper to taste. Simmer for 2 to 3 minutes. Drain and serve immediately.
NOTE: Beans my also be steamed in a steamer for 5 to 8 minutes. This retains better flavor and more of the vitamins. If steaming, mix beans, bacon, drippings, salt and pepper in a separate pot.
