Grilled Salmon (Marinated Salmon Steaks)
Serves 4
- 1 pound fresh salmon steaks, 1-inch thick
- 1/2 tsp finely shredded lemon peel
- 1/4 cup lemon juice
- 1 tbsp cooking oil
- 1 tbsp Worcestershire sauce
- 1/2 tsp dried thyme, crushed
- 1 clove garlic, minced
- 1 tbsp water
For marinade, in a shallow dish combine lemon peel, lemon juice, oil, Worcestershire sauce, thyme, garlic and water. Add fish; turn to coat with marinade. Cover and marinade in the refrigerator for 2 hours, turning steaks occasionally.
Drain fish, reserving marinade. Place fish steaks on greased grill rack. Grill fish on an uncovered grill directly over medium-hot coals for 5 minutes. Using a wide spatula, carefully turn fish over. Brush with marinade. Grill for 3 to 7 minutes more or until fish flakes easily with a fork.
NOTE: I plan on 1/2 of each salmon steak per person in the my menu plan.
